I’m excited to share this white brigadeiro recipe with you as this is a delicious twist on the classic brigadeiro truffles, arguably the most famous Brazilian dessert.

Seriously, I can’t remember a single birthday party I attended in Brazil where they didn’t serve brigadeiro.

While this white chocolate brigadeiro is a more elaborate version of the sweet, it still is very easy to prepare and tastes incredibly delicious!

The white chocolate melts in the mouth while the alcohol and vanilla give a more adult flavor to it—yes, it tastes like more!

You can serve brigadeiros on a variety of occasions, but not limited to:

Can I make these white brigadeiros ahead?

Absolutely! For the best flavor and moisture, make it the day before serving it. However, you can keep it for up to 3 days at room temperature in an airtight container.

You won’t want to keep them in the fridge–unless it’s really hot in your house–because this recipe calls for chocolate, and they harden when cold.

Can I freeze them?

Sure! If you have leftovers and want to save them for another time, place the white brigadeiros in an airtight container for up to 3 months in the freezer.

To thaw them, leave the brigadeiros on a plate at room temperature for a couple of hours.

Tips for making a delicious white brigadeiro

  • Add a little white rum or cachaça to give your brigadeiro balls a more adult flavor. However, leave them out if children will be around. Oh, and only add the alcohol after turning the heat off.
  • Use a chilled blade to slice the chocolate for dredging. It avoids melting.
  • I dredged my brigadeiros in grated chocolate, but you can use something else–there are no hard and fast rules for the white chocolate brigadeiro. Namely, you can use shredded coconut, granulated or crystal sugar (not suitable for freezing, though), chocolate sprinkles, valentine’s sprinkles, etc.
  • To achieve a uniform look, weigh each brigadeiro ball before rolling them. I used about 15 grams for each truffle.

How to make white chocolate brigadeiro

Here’s the instruction on how to make this white brigadeiro. As always, the printable recipe follows at the bottom.

Grease a plate with butter and set aside.

In a medium non-stick pan, combine the butter, sweetened condensed milk, and salt over medium-low heat—always stirring with a spatula or wooden spoon.

Once the brigadeiro mix is warm, add the chocolate pieces and continue stirring.

The mixture thickens after about 8-10 minutes, and once you can run your spoon through the middle of it without it running back together for 2-3 seconds, it is done.

Remove it from the heat, add the cachaça and vanilla and stir it to combine the ingredients.

Pour the mixture into the greased plate, and let it rest for at least 1 hour.

In the meantime, place the candy cups on a serving board and grated white chocolate in a bowl.

Once the 1 hour is over, slightly wet your hands, put a tablespoon of the mixture on your hands, and roll into a small ball. Cover with the white chocolate, and transfer to the bonbon cups.

Ingredients

  • 1 tablespoon unsalted butter
  • 1 14 ounces (397 grams) can sweetened condensed milk
  • A dash of salt
  • 3/5 cups (100 grams) white chocolate chips
  • 1 teaspoon vanilla extract
  • 2 tablespoons cachaça or rum
  • 3/5 cups (100 grams) white chocolate to use for garnish, grated

Instructions
